Each dish becomes a narrative: rice tamal with marmitako and tuna crudo, blue corn taco with confit duck and melipona honey, and suckling pig cannelloni with sinigang reduction go beyond fusion—they become metaphors of cultural blending. The experience closes with “Cacaos,” a tribute to Mesoamerican roots that transforms dessert into memory.
